As ramen shops continue to pursue and develop new menus, we too keep making new products that are compatible. Currently we have over 400 types of fresh ramen recipes, all of which are categorized according to thickness, curl, and color.

Mushi Men(Steamed Noodles)

Mushi Men(Steamed Noodles)

These noodles are primarily used for Yakisoba. Depending on the process involved, Nishiyama noodles are divided into either boiled and chilled noodles, or specially-made fresh noodles that are steamed.

Reitou Ramen(Frozen Ramen)

Reitou Ramen(Frozen Ramen)

Our fresh noodles are boiled when at their perfect condition, and then flash-frozen. Unlike regularly frozen noodles, these products have been boiled once. When using the noodles, simply thaw them in boiled water for no more than 15 - 20 seconds before serving. The pros of using such noodles is reduced prep time, and basic cooking techniques. The cons are the necessity of storage and logistics at -18℃, and a large storage space.

We develop frozen fresh ramen noodles for commercial use that can be preserved for long periods of time without losing quality or taste. This type of Nishiyama ramen noodles are shipped to our customer ramen shops abroad. Frozen fresh Nishiyama noodles are categorized according to thickness, curl, and color.

Our commercial use dried Nishiyama noodles are slowly dried without being boiled or steamed. Though it takes about 7 minutes to boil, the finished product will be very close to a freshly made one. Noodles can be stored at room temperature for several months without any loss. These noodles are fit for areas such as central Asia where logistics of frozen foods from Japan is difficult, and for restaurants that are not ramen shops, and therefore do not make that many bowls of ramen per day.

Together with Nishiyama Fresh Noodles, Nishiyama Seimen is also producing wonton, gyoza, and shumai dumplings skins. Thick skin is a characteristic of Hokkaido gyoza, and is very delicious. We are not merely looking to produce delicious fillings, but also really tasty gyoza, shumai, and wonton that have delicious skins.

One of the main defining characters of ramen flavors, is the basic tare sauce. At Nishiyama Seimen, we do business with over 3,000 restaurants and ramen shops throughout Japan. Thanks to our relationships and business with our customers, we are aware of trends, and have developed original tare sauce accordingly. Using miso, soy sauce, and salt as base, we have developed a diversified range of original tare sauces. This versatile base sauce can be used by each customer to develop an original flavor as can be blended with multiple other types to create new bowls.

Another defining character of making ramen flavors, are seasoning oils, essential to give a delightful smell and aroma to the dish as well as taste. This is possible by a variety of seasoning oil which we make here at Nishiyama Seimen after a long time preparation.

Frozen gyoza dumplings are one of our hidden best sellers among our commercial use products, and have been made for restaurants from long time ago. Hokkaido gyoza are known for their delicious thick skin! The filling is quite rich so that the gyoza can be eaten even without dipping sauces. In comparison to mainland Japanese gyoza, our Hokkaido made gyoza are the closest to the authentic Chinese ones.

Our Char siu is made in large barrel pots, just like ramen specialists do in their shops. Ingredients are simple, and many cuts of pork meat are used.
