Customized noodles made with very little hydration. The taste of wheat is more powerful when served as "Chuka soba", or dishes with seafood or chicken broth-based white soups. Also delicious when used for dipping as "tsukemen" or if mixed with fresh ingredients as "mazemen". Straight noodles cut with a №22 blade.
